Butter cookies is a classic, simple mix and bake recipe. With just a handful of ingredients and following through with this simple and fun recipe, you will achieve crispy and buttery cookies which easily melt in the mouth.

The good thing about this recipe is that, you get to create unlimited variation of cookies by adding your favourite ingredients e.g., peanut butter, chocolate, cinnamon, etc. Don’t forget to get some fancy cookie cutters to make it more fun especially if you want to involve the kids. Enjoy your homemade butter cookies with a warm or cold drink of your choice any day, any time.

Ingredients:

  • Flour                         -250g
  • Salt                         -1/2 tsp.
  • Unsalted butter             -227g
  • Sugar                                     -100g
  • Egg yolk             -2
  • Dainess Vanilla essence -2 tsp.
  • Sugar             -60g

Baking Instructions:

  1. Cream butter, sugar and salt together to a fluffy and light consistency.
  2. Add egg yolks while mixing. Scrape down the sides of the bowl.
  3. Add Vanilla essence.
  4. Pour in the flour and mix until well incorporated.
  5. Roll dough into a log, wrap in baking paper or cling film and put in the refrigerator to chill for at least an hour.
  6. Once dough is chilled, sprinkle sugar on the surface, unwrap dough and roll in the sugar.
  7. Use a knife to cut dough into slices of even thickness.
  8. Place cookies on a baking paper in a baking sheet and bake at 180◦C for 10 -12 minutes until edges turn golden brown.
  9. Remove from the oven and cool.
  10. Serve with a cup of coffee. Yum!!
